Всем давно известно о пользе брокколи. Теперь же китайские ученые объяснили, как надо правильно готовить это овощное растение семейства капустных, чтобы принести организму максимальную пользу. Специалисты из Чжэцзянского Университета рекомендуют сначала мелко порезать брокколи — на кусочки примерно в два миллиметра. Затем дать им постоять от 30 до 90 минут и лишь потом слегка обжарить, постоянно помешивая. В брокколи содержится вещество сульфорафан — соединение, обладающее противораковым и антибактериальным эффектами. Оно также регулирует уровень сахара в крови. При описанном выше способе обработке уровень сульфорафана, как показали результаты исследования, повышается в 2,8 раз. Как пишет The Daily Mail, по мнению ученых, перерыв между нарезкой и приготовлением брокколи позволяет полезному веществу «дозреть». А сама нарезка активирует в поврежденном растении фермент мирозиназа, который делает сульфорафан пригодным для усваивания. Хотя такой способ может показаться слишком хлопотным и длительным, ученые говорят, что он того стоит, поскольку сульфорафан в таблетках намного хуже усваивается организмом. Выводы китайских биохимиков были опубликованы в журнале Journal of Agricultural and Food Chemistry.
